How about some Mushroom Newburg Auggie?? ....1-Lb fresh mushrooms..1/4 cup melted butter, or margarine..!/2- cup dry sherry.. 3-cups cream sauce,(recipe to follow)..1/2 cup blanched Almonds.....Wash Shrooms, drain...simmer 10 minutes in small amount of salted water...Slice them, toss with melted butter...Stir sherry into cream sauce...Pour layer of sauce into 1 1/2 quart casserole...Add a layer of mushrooms, top with almonds.. Repeat layers ending with a layer of white sauce and a sprinkling of almonds..Bake at 350 degs. F. for 20 mins.......Cream sauce..Melt 6 Tbsp butter in a sauce pan, stir in 6 Tbsp flour, don't brown it...Add 1 1/2 cups chicken broth. I cup light cream and 1/2 cup sherry,(Or any white dinner wine)...Stir constantly until thickened...Season with 1-Tsp salt, daqsh of pepper, and if you wish, 1/2 Tsp MSG... Yeah, I know.......Ol'e Uncle Don...

Anyone live in Georgia or South Carolina on this board? I am flying to Savannah, GA and driving to South Carolina for our daughters graduation at the Marine boot camp on Paris Island, SC. We are staying April 22-28th. Would be cool to go shroomin while there. If anyone could give me lodging idea's/area's to stay. I was looking at a condo on the beach off the the ocean on Hilton Head Island, but then thought...maybe I do not want to be that far East? Any ideas would be appreciated. I need to book lodging asap. Hey shroomies-man I haven't been on the internet that much. Husband has been home alot, giving his employee's as much hours as they can get. Times are getting tight in the construction trade and we think we are finally feeling the hit? We've been driving back and forth over the mountain passes for 2 months. I think it could be an early year? Never really had a snow base stay around. Cle Elum goes back and forth with snow/dry patches, Easton has snow sticking around last weekend. Going to go up in a few weeks and scout around for morels. I see you guys have shared a few recipes. I tried this one a few weeks back. Barley risotto. Its very good. Reconstituted chanty's and matsi's. Sauteed onions, garlic and the barley in butter. Then cooked it like a classic risotto adding homemade beef stock until the barley was ala dente. Then added my mushroom puree w/stock, then finished with freshly grated parmesan cheese and parsley. And served with Venison meatballs. Yummy ;)

Here's one I've been playing w/lately; I call it Oysters in morel roux. Heat butter slowly over stove, when melted stir in dry powdered morels. Then whisk in flour. Cook slowly until thicker. At end add cream, nutmeg, paprika, salt and pepper. Cook for few minuets more. Shuck some fresh harvested oysters retaining deep shell half. Put shucked oyster back in retained shell half. Pour sauce over oyster. Position on baking pan w/rock salt. Bake in oven @475 for 8-10 mins or when sauce begins to carmelize. Serve as appetizerz or dozen for main course.

Baked Mushrooms, Contra Costa.....12 Large Mushrooms...Lemon Juice...2-Tbsp Butter...2-Tbsp grated Swiss Cheese...1/4 -cup bread Crumbs...2-Tbsp minced parsley...1/2 clove minced garlic...1-Tbsp minced onion...Salt & Pepper...2-4 Tbsp dry sherry. Wash mushrooms, remove stems, leave caps intact...Sprinkle a few drops of lemon on caps...set aside...Prepare stuffing; Mince stems very fine.. Saute in butter. Combine cheese, bread crumbs, parsley, garlic, onion and salt & Pepper...Add sauted mushroom stems, mix...Add enuff sherry to moisten the mixture...Pile this into the mushroom caps, sprinkle with additional bread crumbs & dot with butter.. Bake at 350 Degs. for 15 minutes. ....Use as appetizers, or I accompany chicken dinners with them... Uncle, Don

Let me start with this one Aug. "Marinated Mushrooms". 1-lb of wild mushrooms. 1-cup white wine. 1 1/2- cup olive oil. Tabasco. 2-Tsp salt. Pepper 3-Tbsp minced Onion. 3-Cloves garlic minced. 1-Lemon, sliced thin. 4-Whole cloves. 1-Bay leaf. 3-Tbsp, minced parsley. Marinade mushrooms in wine for 1-hour. Wisk olive oil, & tabasco to taste, salt & pepper to taste. Mix in onion, garlic, lemon slices, cloves & bay leaf. Drain wine from mushrooms & add to oil mixture & toss. Store in jar with tight fitting lid in fridge for 3 days before serving. Drain and sprinkle with parsley when served. Will add a couple more in a day or so. I really liked them myself. Uncle Don
